Pork Filet Mignon with Beetroot Puree

Ingredients

  • 1 Sadia pork filet mignon
  • 200 grams of Soltíssimo Sadia cheese
  • 1 teaspoon of salt
  • Ground black pepper to taste
  • 1 lemon juice
  • 1 clove of minced garlic
  • 2 tablespoons of butter
  • 2 chopped tomatoes
  • Salt to taste
  • Beetroot puree:
  • 3 peeled beets
  • Half an onion cut in half
  • 1 head of garlic
  • 2 tablespoons of olive oil
  • 2 cooked yams
  • Salt to taste
  • Black pepper to taste

Method of preparation

  1. Slice the Sadia pork fillet mignon into 2-cm medallions.
  2. Season the pork fillet mignon with salt, juice of 1 lemon, black pepper and 1 chopped garlic clove.
  3. In a pan (oven-safe) over medium heat, add 2 tablespoons of butter and brown the pork filet mignon for 4 minutes on each side.
  4. Add 2 chopped tomatoes, salt to taste, black pepper to taste and cook for 5 minutes.
  5. Then, cover the pork fillet mignon medallions with Soltíssimo Sadia cheese , turn off the heat and place the pan in the preheated oven for 5 minutes at 180 degrees Celsius.
  6. Serve the pork fillet mignon with the mashed potatoes. Beetroot puree:
  7. In an oven-proof dish, place the puree ingredients: the 3 peeled beets, half an onion cut in half and 1 head of garlic.
  8. Pour 2 tablespoons of olive oil into the ingredients, cover the dish with aluminum foil and place it in the preheated oven for 30 minutes at 180 degrees Celsius.
  9. Then, remove the dish from the oven and place 2 cooked yams, beets, onion, unpeeled garlic cloves, salt to taste and black pepper to taste in a food processor.
  10. Turn on the processor and blend until it becomes puree.
